The mother-of-two later turned heads in a chic red crop top and skirt set.
She accessorised with a diamond tennis necklace and stylish sunglasses.
Meanwhile, Oliver showed off his muscular physique in black swim shorts.
The happy family appeared to be having the time of their lives as they splashed around in the Mediterranean sea with friends.
Roxy has been keeping her social media followers updated every step of the way during her current overseas jaunt.
On Saturday, Roxy shared a video of herself unboxing a lavish set of jewels worth thousands of dollars from famed French jewellers Van Cleef and Arpels – a gift from Oliver.
Also seen in the clip was Roxy’s 13-year-old daughter Pixie, who was gifted a box containing a matching stunning bracelet to her mother’s.
In the video, Pixie can be seen covering her mouth in shock and excitement after first catching sight of the special present.
The Vintage Alhambra bracelet features 18 carat yellow gold and agate gemstones motifs and retails for an eye-watering AUD $8,650.
Roxy also shared a photo of herself modelling the blue version as well as the AUD $10,200 18K yellow gold model.
Later that day, the PR guru shared a glimpse of her stunning evening attire while out in Portofino.
Roxy flaunted her figure in an all-pink ensemble, donning a chic crop top paired with a matching skirt.
But it was her accessories that stole the show.
The Australian socialite completed her look with a pair of Christian Dior slides, which come with a price tag of $1,190.
She also carried her Hermès Mini Kelly Bag in a coordinated shade of pink, which she purchased in 2018 for $18,000.
Roxy has long publicised her love of high-end clothing and accessories.
